Lemon Cake n Frosting
Frosting:
3c. Powdered sugar
1/2 c. Lemon Juice
1 stick Butter or 1/2c Crisco
use Hand mixer and medium bowl to mix ingredients.
Cake Flour:
For every cup of flour take back 1 tbsp and replace with 1 tbsp corn starch.
Lemon Cake:
1 1/2 sticks butter or 3/4c.crisco
1 1/2 c. White sugar
4 large eggs well beaten
3 c. Cake flour
1/2 tsp salt
1 1/2 tsp baking powder
1 c. Milk
1/2 c. Lemon Juice
1/4 c. Vegetable oil
zest of 2 lemons
Preheat oven to 350f.

Combine in mixer bowl all wet ingredients and beat until creamed.
Next in Medium bowl add all dry ingredients and sift with fork.
Now add that mixture to the mixer bowl and beat on medium til batter is achieved.
In Oblong cake pan I use Canola Spray but Pam will do..
Now Pour the batter and use spatula to scrape the bowl.
Bake @ 350 for 25 minutes.
Test knife should come out clean when put in middle of cake.
Let cool then frost.
Store in Icebox
Maple Nut Cake
Cream:
1/2 c. Crisco Shortening
1 c. Brown Sugar
2 egg yolks
Add:
3/4 c. milk and mix well
Sift together:
1 1/2 c. flour
1/2 tsp. salt
2 tsp. baking powder
Then Add:
1 c. finely chopped pecans
1. tsp valilla
Bake at 350 for 35 minutes
Icing:
1/2 tsp. butter to 2 tblsp. hot milk.
1 1/2 cup powdered sugar
1/2 tsp. maple flavoring
make into paste
Milk Chocolate Birthday Cake
Frosting:
3 c. Powdered Sugar
3/4 c. Cocoa Powder
1 Stick Butter
1/2 c. Evaporated Milk
Combine all Ingredients in mixer bowl and Beat on lower til hi

2 c. White cane sugar
1 c. Milk
1/2 c. Vegetable Oil
2 Large Eggs
2 tsp. Vanilla Extract (optional)
Beat together well
2 c. All Purpose Flour
3/4 c. Cocoa Powder
2 tsp. Baking Powder
1 1/2 tsp. Baking Soda
1 tsp. Salt
Combine all dry ingredients in a bowl and use fork to mix well then add to mixture,use a low setting to mix together really well.
1 c. BOILING WATER
Lastly ADD the boiling water and beat on low til it is well incorporated.
Pour into greased pan
Bake at 350f. for 30 minutes
Let cake completely cool then frost the cake.
Pound Cake
1 c. Shortening
2 c. Cake Flour
2 tsp. BakingPowder
4 eggs
1 1/2 c. confectioners sugar
2 tbsp. mils

Cream shortening and add flour and add sifted baking powder.
add 1/4 tsp of salt if unsalted shortening is used.
Beat egg yolks until light and add sugar Gradually, stirring constantly.
Add Milk.
Combine the two mixtures and beat thoroughly.
Fold in stiffly beaten egg whites and beat until they are well incorporated.
Flavor with vanilla or nutmeg.
Spread batter in a greased shallow pan and bake in a moderate oven.
Bake at 350 for 40 minutes
Sour Cream Fudge Cake
3 eggs
1 1/4 c. Sugar
1 c. Sour Cream
1 1/4 . Cake Flour
4 Squares Chocolate
Pinch Salt
1 tsp. Baking Soda
1 tbsp. Boiling Water
1 tsp. Vanilla

Powdered Cocoa and 1 1/2 Tbsp. Cooking oil

To the egg whites beaten until stiff add the sugar.
Beat 5 minutes then add the egg yolks,well beaten.
Add half a cup of the sour cream and the flour.
Melt the chocolate,add the other half cup of sour cream gradually,and add to the first mixture.
Add the salt,soda dissolved in boiling water and vanilla.
Bake in a loaf in moderate oven.
Bake @ 350f. 50 minutes
Carrot Cake
1 1/2 c. packed brown sugar
1/2 c. white cane sugar
1c. cooking oil
4 large eggs
3/4 c. crushed pineapple
1 tsp vanilla
2 c. grated carrots
Cream ingredients
Sift with fork these
2 1/2 c. All purpose flour
2 tsp baking powder
1/2 tsp salt
1 1/2 tsp. Cinnamon ground
1 tsp. ginger
1/4 tsp nutmeg
1/4 tsp clove if desired
Graduall add dry mixture
Beat thoroughly
Bake at 350f. for 35 minutes
Cream Cheese Frosting
1 stick (1/4) Butter
16 oz. Cream Cheese
1 1/2 tsp. Vanilla Extract
4 c. Powdered Sugar
Using Mixer Beat on low til smooth
BigT's Cheesecake
Crust
2 c. Graham Crumbs
1/4 c. Brown Sugar
1/2 c. Crisco (1 stick butter)
Melt Crisco then pour into bowl with grahams and sugar and Mix Well.
Bake @ 350f. 10 min

2 8oz. Packs cream cheese
1/2 c. Sugar
1/4 c. Sour Cream
2 Large Eggs
Mix Well and beat 4 minutes to cream.
Pour into crust.
Bake @ 325f. 40 - 45 min
Let cool the refridgerate 4 hours before Serving.

3/4 c. Crisco
1 1/2 c. White Sugar
4 large eggs beaten
1 1/2 c. milk
1/4 c. vegetable oil
mix well
3 c. Cake Flour (add 1 tbsp corn starch per cup of flour)

1 1/2 tsp. Baking Powder
1/2 c. unsweetened coconut
mix well
Preheat Oven To 350
Prepare Pan with cooking spray
Flour Pan for cake removal
Bake @ 350 for 25 minutes

Preheat oven to 350f.
2 3/4 c. Flour
2 tsp. Baking Powder
1 tsp. Cinnamon
Sift Dry Ingredients

2 c. Crisco
2 c. brown sugar
7 eggs separated
4 c. Flour
2 tsp. Mace
2 tsp. Cinnamon
2 tsp. Baking powder
1/2 tsp. salt
2 tbsp. grape juice
2 tbsp. Whole Milk
Box of raisins
2 3/4 c. dried tart cherries
2 c. Chopped walnuts

Cream Crisco & sugar.....
separate egg yolks from whites.....then beat yolks
and then beat whites to very stiff til dry.
Add yolks and mix the add whites then mix well
add juice and milk,chopped nuts and fruit.
Add flour,mace,cinnamon,baking powder
and salt that has been whisked with fork.
Line pan with oiled parchment paper

BigT's Dark Chocolate Cherry Cake
1/2 c. Crisco
1/2 tsp. Vanilla
2 c. Sugar
2 egg yolks
3 c. Cake flour (1 tbsp. cornstarch per cup )
4 tsp. Baking powder
1/2 tsp. Salt
3 squares chocolate ( 9 tbsp. cocoa & 3 tbsp oil)
2 egg whites stiffly beaten
1 1/2 c. Water 1/2 c. sugar & 1 1/2 c. cherries
Bring to boil in saucepan
3 tbsp. Milk

Cream Crisco,vanilla,sugar first then add yolks
to finish creamed mix.
Sift with fork flour, cornstarch, baking powder
and salt.
Add to creamed mixture.
Add cherry water sugar mix then add milk.
add 3 squares chocolate mix well
Add stiff egg whites
Pour into oblong 9x13 greased pan
Bake at 350 f. for 35 minutes
Use knife test,if it comes out clean its done.
Sour Cream Cake
1 egg beaten
1 c. Sugar
3 tbsp. Lemon juice
Grated rind of 1 lemon
2 c. cake flour (add 2 tbsp. Cornstarch)
2 tsp. Baking powder
1/2 tsp. Baking soda
1/4 tsp. Salt
1 c. Sour cream

Directions:
Add sugar and egg and beat.
Add lemon juice,rind and sour cream the beat.
Sift dry ingredients first then add slowly and
mix well beating mixture 3 minutes on medium.
Grease and flour cake pan.
Bake at 350f. for 25 - 30 minutes



Golden Orange Cake
2 c. Sugar
1 tsp. Salt
1 tsp. Orange extract
1 c. Milk
5 eggs
4 c. Flour
1 c. Crisco
4 tsp. Baking Powder

For Cake:
Add Crisco and sugar, eggs and extract
and cream the mix.
Add sifted flour,salt and baking powder
alternately with milk till batter forms.
Baking Pan 9x13 greased and floured
Pre heat oven to 350f Bake for 35 minutes
Icing:
Boil 1 c. water with 2 c. sugar till it forms
soft ball,240f.
Pour over 4 egg yolks well beaten then
beat til smooth and thick.
Add 1 1/2 tsp. orange extract beat again.
Spread on cake at once
