Cornflake Macaroons
2 egg whites
1 c. sugar
3 . cornflakes
1 c. coconut flakes

Beat egg whites and add,gradually,the sugar,cornflakes and coconut.
Mix Well
Drop by spoonfulls onto greased paper and bake in moderate oven til light brown.
put paper with cookies onto wet towel to be removed easily.
Time in baking,25 minutes
Temperature,325f.
Makes 3 dozen
Perfect Peanut Butter Cookies
1 1/2 c. Flour
1 1/2 tsp.Baking Powder
1/2 tsp.Salt
1 c. brown sugar
1/2 c. Peanut Butter
1/4 c. Crisco
1 large egg
1 1/2 tsp. Vanilla Extract

Combine Brown Sugar,Crisco,Egg and Peanut butterand Vanilla and beat til smooth the in a seperate bowl add Flour,Baking Powder,Salt
Roll into Balls then crisscross with fork.
Bake at 400f. for 12-15 minutes

2 c. peanut butter
1 c. brown sugar/white
2 eggs
no flour
Mix vigorously til smooth

Lemon Cookies
3/8 c. Butter
3/4 c. Sugar
1 egg,well beaten
3 tbsp. Lemon juice
1 1/2 c. Cake flour (add 1 1/2 tbsp. cornstarch)
Grated rind of 1 lemon
1/2 tsp. Baking powder
1/8 tsp. Baking soda
1/4 tsp. Salt
1/2 c. Chopped raisins

Cream butter,sugar and egg then add lemon
juice and rind.
Sift cake flour,baking powder,soda and salt.
Add to mixture and mix well then add in raisins.
Turn onto lightly floured board and roll thin
1/8 inch then use floured cutter.
Place on greased cookie sheet
Bake at 425 for 10-12 minutes
Coffee Drop Cookies
1 c. Sugar
1/2 c. Crisco
1 egg
1/2 tsp. Baking soda
1/2 c. Chopped nuts
1 tsp. Ground cloves
3/4 c. Cold coffee
1/4 tsp. Salt
1 tsp. Baking powder
1/2 c. Chopped raisins
1/2 tsp. Cinnamon
1 tsp. Vanilla extract

Cream Crisco and sugar then egg,add vanilla.
Sift flour,baking powder,soda,salt
cloves and cinnamon thoroughly.
Add dry ingredients and coffee alternately.
Then add raisins and nuts.
Lightly grease cookie sheet.

Bake at 400 for 15 minutes
Mince-meat Cookies
1 c. Crisco
2 c. White sugar
3 eggs beaten
2 tbsp. Milk
4 c. Cake flour
(add 1 tbsp. Cornstarch per cup of flour)
4 tsp. Baking powder
1/2 tsp. Salt

Cream shortening and sugar.
Add eggs and milk.
Sift flour,baking powder,cornstarch and salt.
Add to creamed mixture & mix well.
Chill in fridge 2 hours
Turn onto lightly floured board and roll in
sheet 1/8 inch thick & cut with floured cutter.

1/2 c. Mince-meat
1/2 c. Sugar
1/3 c. Water
Cook mince-meat,sugar and water 10 minutes.
Let cool
Place 1 tsp. mincemeat between 2 cookies &
Press edges together.

Miss Bobbies No Bake Chocolate Cookies
2 1/4 c. Old fashioned oats
1 c. Peanut butter
1 c. White sugar
1 c. Brown sugar
1/2 c. Milk (powdered works)
8 tbsp. Butter or margarine
1/2 c. Cocoa powder
1 tbsp. Vanilla

Directions:
Line pan with wax paper or use cooking
spray.
In pan on medium,Add sugar,milk,butter
cocoa and peanut butter & stir til mixed.
Stir constantly
Bring to boil for 1 minute so the cookies
will set otherwise they will be gooey.
Add Vanilla
Take off heat then add oats quickly and
turn out onto pan spooning it out.
Place pan into fridge a few hours

3 c. Cake flour Add 3 tbsp. Corn starch
1 tsp. Baking powder
1/4 tsp. Baking soda
1/2 tsp. Salt
1 c. Chopped Raisins

Cream wet ingredients then add dry ones
Add raisins
Roll out 1/8 in thick on floured board
Use cookie cutters
Bake 425 for 10-12 minutes
Shortbread Biscuits
1 c. Plus 2 tbsp. Unsalted Butter
1 c. Powdered Sugar
1 tsp. Vanilla
3 c. Flour
1 tsp. Salt

Cream soft butter then add sugar
then flour.
Mix dough til all combined but
Do Not Overwork Dough.
Shape dough on lightly floured surface
into rectangle block then wrap in
plastic wrap and put in fridge 1 hour.
slice 1/2 inch thick and place on
greased cookie sheet.
Bake at 350 f. For 30 minutes
Let completely cool and enjoy

Molasses Cookies
2 c. flour
2 tsp. soda
2 tsp. ground ginger
1 tsp. cinnamon
1 tsp. ground cloves
1/2 tsp. Nutmeg
Whisk dry ingredients

Cream this first then add in dry

Molasses Wafers
1/2 c. Molasses
1/2 c. Sugar
1/2 c. Butter
1/2 tsp. Cinnamon
1/2 tsp. Ginger ground
1/2 tsp. Baking Soda
1 c. Flour

Directions;
Boil all ingredients except flour for
6-8 minutes then let it cool.
Add in flour to form dough and
roll very thin but it makes it hard to
roll out. If the dough is not stiff
the cookies will spread while baking.
Cut into strips 1 in wide 4 in long.
Bake at 400 f. for 6 minutes
