Cheese Fondu

1 c. Bread crumbs

1 c. shredded cheese of choice

1 c. whole milk

2 large eggs

1 tbsp. butter

1/2 tsp. salt

1/8 tsp. dry mustard

1/8 tsp. paprika

Mix bread crumbs,milk and cheese and
butter in a
double boiler.
When cheese is melted add eggs beaten
mix well then add seasonings.

Cook until thick and smooth.


Rarebit

1/2 c. Milk or cream

2 c. shredded cheese of choice

2 tbsp. Butter

1 large egg

1/2 tsp. salt

1/4 tsp. Cayenne

Using a double boiler add milk and cheese
when cheese melts add butter.
Add egg slightly beaten and mix,
then add salt and seasoning.
Stirring constantly until thick and smooth.

Serve over toast at once.
Cottage Cheese

Heat sour milk to 100 Fahrenheit
and pour into a strainer lined
with cheesecloth.

Pour over 1 quart hot water and let
curd hang in cheesecloth bag until
all the whey has drained.

Add enough cream and melted
butter to moisten,add salt.
Stuffed Cabbage

1 medium cabbage

1 pound ground beef 93% lean

2 slices bacon

1 onion

1/2 c. bread crumbs

1/2 c. milk

1 large egg

Seasoning

1 large bell pepper

Select cabbage and remove outside
leaves then cut out stalk end leaving
a hollow shell.
Chop burger,bread and onion and add
crumbs soaked in milk,beaten egg,
salt and pepper.
Shape into balls and arrange in cabbage.
add strips of bell pepper on top of mixture
Tie in cheesecloth and put in large pot
and boil until tender.
BigT's Classic White Sauce

1 1/2 c. Milk
1/2 c. heavy cream
2 tbsp. butter
2 tbsp. Flour
Salt & Pepper to taste

In saucepan add the milk and
cream,add  flour and whisk
thoroughly then add butter.

Salt & Pepper to taste
Potatoes Au Gratin

Boil a pot of peeled potatoes

Cut into cubes and layer the
bottom of a baking dish.

Cover each layer with white
sauce and cover in shredded
cheese.

Cover top in bread crumbs and
bake in moderate oven 20 minutes.
BigT's ...Pork Tenderloin Enchiladas

1 tenderloin

12 Corn tortillas

1 c. chopped onion

1 c. chopped celery

1 c. chopped carrot

1 c. Green chilis

3 c. grated cheese

28 oz can of red sauce

1 can green chili sauce

1 bottle of Thailand Mango Habenaro

In fry pan heat oil and lightly fry corn
tortillas.

Next cook tenderloin in Worcestershire
 
Sautee onions, celery and carrots in butter.

Place meat,veggies chilis and green sauce
and cheese on tortillas and roll then place
tortilla in baking dish seam side down.

Its sounds easier than it really is.

Once all tortillas are in pan,top with
Red sauce and remaining cheese

Top with entire bottle of Thailand
Mango Habenaro Sauce

Bake in oven at 350 for 20 minutes




Baked Applesauce

12 tart cooking apples

1/2 c. White sugar

1/8 tsp. Salt

1/2 tsp. Nutmeg

1/2 tsp. Cinnamon

Directions:

Wash,peel,core and divide into eighths.

Place in baking pan and half cover with
cold water.

Add in seasonings

Cover with foil and bake at
350 f.--2 1/2 hours to 3 hours.

Remove and mash....

Serves Momma and 3 little ones

Applesauce

12 tart cooking apples

5 tbsp. Sugar

1/8 tsp. Salt

1 tsp Cinnamon

1/4 tsp Nutmeg

Wash,peel,core and quarter apples.
Put in saucepan and half cover with cold water.

Bring to boil then cover and reduce heat
and let simmer until tender.

Stir in sugar and salt, cinnamon and nutmeg

Cook for another 5 minutes.

Mash apples with potato masher.

Chill in icebox before serving
