Breaded Pork Chops

6 pork chops
Fine,dry bread crumbs
1 medium sized onion
2 tbs. cooking fat
1/2 lemon
salt,pepper

Use lean chops,cut rather thick
roll in crumbs
slice onion and cook in fat til lightly brown.
Arrange chops in pan,sprinkle with salt,pepper and lemon juice.
Brown one side,turn,and add water almost to cover,and cook in a moderate oven until tender,removing the cover for the last 15 minutes.

time 50 minutes,temp 350f.
Serves 6
Ham Southern Style

1 pound slice of ham
18 cloves
10 peppercorns
2 tbsp. brown sugar
2/3c.white grape juice
----------------------------------
Soake ham in cold water for 1 hour,Drain,wipe off superfuous moisture,and place in shallow baking dish.
stick with coves,distribute peppercornsabout the ham,sprinkle with brown sugar,and add the white grape juice.Bake in moderate ovenuntil tender,basting occaisionally.
Temerature 325
Bake for 1 1/4 hours
Serves 4

BigT's Home Style Meatloaf

3 lbs. Hamburger
3 eggs beaten
1/2 jar Prego sauce
1/2 package stuffing mix
1 large onion
1/2 tsp garlic powder

Mix all ingredients thoroughly
Put in oblong cake pan,use fork to spread evenly.
----------------------------------------
Topping:
Use other half of the Prego
in mixing bowl,whisk in 2 tblsp Worshtechire sauce
pinch of salt

Bake at 375 for 1 hour
Chicken A La Tartare

1 Chicken
1 egg
3/4 c. Crisco
Bread crumbs
salt n pepper to taste
Mixed pickles

Singe,empty and slit chicken in half,take breast bone out and sprinkle salt and pepper over.
Melt 1/2 c.Crisco in frying pan and fry chicken for 30 minutes,turning it now and then.
Remove from pan and place between two dishes with heavy weight on top,til it is nearly cold.
Then dip in beaten egg,and roll in bread crumbs.
Melt remaining Crisco,then sprinkle all over chicken.
Roll in bread crumbs once more,
Fry in Crisco til golden colour.
Serve at once with a garnish of chopped pickles and tartare sauce.
Chicken Bacon In Cream Sauce

Olive oil and salt n pepper
1/2 carton bone broth
2 c. heavy cream
3/4 c.  chopped bacon
8 chicken thighs
8 oz. cream cheese
8 oz. grated cheese

Cook chicken in pan completely with olive oil in pan and seasoned with sat and pepper
remove chicken and pour out half of the broth.
Next add in 1/2 carton of bone broth and bring to a boil.
Add in 2 c. heavy cream
Add in 8 oz cream cheese in bits
add chopped bacon
add 1/2 the grated cheese,bring to boil making sure cream cheese melts.
Stirring occaisionally.
Place cooked chicken in pan and cover in sauce.
Sprinkle remaining cheese over thighs and cover and
simmer for 5 minutes.

Serves 4
Hominy And Ham Southern Style

2 tbsp. cooking fat
2 tbsp. chopped onion
2 sweet red peppers
2 tbsp. chopped parsely
1 1/2 c. cooked hominy
1 c. chopped cooked ham

Heat fat in frying pan,Add onion,chopped peppers,and parsely.Cook until brown,Add cooked hominy,Season with salt and pepper to taste.
Add cooked ham,Pile upon platter and garnish with strips of sweet pepper and parsely.
Serves   6

Sirloin Steak w/Fried Apples

1 Sirloin steak 2 lbs.
2 tbsp. melted Crisco
1 tsp. Salt
1/2 tsp. White Pepper
4 Tart Apples
Milk

Mix salt and pepper with melted crisco, then rub mixture into steak and let steak lie in it 20 minutes.
Broil it over a clear fire til done and serve surrounded with fried apples.
Peel,core and slice apples,then dip in milk, toss in flour, and drop in hot crisco to brown

Curried Ox Tongue

6 slices cooked ox tongue
3 tbsp. crisco
2 tsp. curry powder
6 chopped mushrooms
1 c. brown sauce
1 dinner roll
1 egg
1 c. boiled rice

For tongue:
cut slices of tongue,fry in crisco,season with 1/4 tsp. salt and curry powder,then add mushrooms,and brown sauce,simmer 10 minutes.
Cut large dinner roll into slices,and toast them lightly on both sides;dip them in egg well beaten,then
fry in hot crisco and drain.
Dish up slices of tongue alternately with fried slices of roll, pour sauce round base, and serve with boiled rice.
For Brown Sauce:
Melt 3 tbsp. crisco, add 1 chopped onion, piece of carrot, 2 mushrooms, and fry a good brown colour; stir in 2 tbsp. flourand fry it also; then add 1 c. stock or water and a few drops kitchen bouquet.
Let all cook 10 minutes, stirring constantly add seasoning of salt and pepper, and strain for use.
Sufficient for 6 slices

Macaroni and Round Steak

1/2 package macaroni
1/2 can tomatoes
3 tbsp. crisco
2 onions
salt n pepper to taste
1/2 c. grated cheese
1 pound round steak
1/2 c. breadcrumbs

Break macaroni into inch leangths and add it with 1 tbsp. crisco to plenty of boiling water and boil 20 minutes,then drain.
Put steak and onions thru a food chopper.
Put macaroni into Criscoed fireproof dish,then put in meat and onions,add seasonings,tomatoes,cheese,breadcrumbs,and remainder of crisco melted.
Bake in moderate oven 350f. one hour.

Chicken Croquettes

3 tbsp. butter
5 tbsp. flour
1 c. milk
2 c. chopped cooked chicken
1/2 tsp. celery salt
salt n pepper to taste
1/2 chopped onion
2 tsp. parsley flakes
1 egg
bread crumbs

Melt butter,add flour and blend to a smooth paste.
Add milk gradually and cook until thickened,stirring constantly.
Add chicken and seasonings.
Cool and shape.
Roll in fine crumbs,dip in beaten egg and roll in crumbs again.
Deep fry for 3 minutes at 360f.
Serves six or two big guys.
Blue Cheese Burgers

1 beaten egg
1 tbsp. Worcestershire
1/3 c. rye bread crumbs
1 tsp. mustard
Dash of pepper
Dash garlic powder
1 1/2 lbs. Ground beef
3/4 c. crumbled blue cheese
6 toasted buns

Mix in bowl egg and worcestershire,Stir in bread crumbs,mustard,pepper and garlic powder.
Add ground beef,mix well.
Form 12 patties,top with 2 tbsp of blue cheese, place pattie over and seal edges.
Grill patties over medium heat 7 minutes each side
Serves 2 Big Guys or Momma with 3 little ones

Beef Loaf

1 1/2 pounds ground round steak

1 c. bread crumbs
1 egg
3/4 c. whole milk
2 tbsp. chopped onion
6 strips salt pork
2 tbsp. chopped parsley
1/2 tsp. worcestershire
1 tsp. salt
1/4 tsp. pepper

Mix the meat with bread crumbs,add beaten egg,milk and seasonings.
Pack into greased loaf pan,lay the strips of pork over the top and
bake in a moderate oven/350 f.
Bake for 75 minutes

Feeds Momma and 4 little ones

Log Cabin Steak

1 round steak
1 large onion
1 clove garlic
salt n pepper
1 c. Sherry or White wine

cut meat into pieces then roll in flour.
Chop onion and garlic finely and simmer in sherry or white wine for 5 minutes.
in another pan Fry steak and put onto platter then
pour sauce into pan with the drippings and heat then pour over steak.

Serves Momma and 3 little ones

Fried Oysters

1 pint Olympia oysters
1 c. cracker crumbs
2 eggs,beaten
Salt n pepper to taste

Dip each oyster in egg then
in flour then egg,
fry in butter or bacon
drippings til brown.
Beefsteak & Kidney Pie

1 1/2 lbs. Beefsteak

1/2 lb. Beef kidney

1 tbsp. Flour

1 tsp. Salt

1/4 tsp. Pepper

1/8 tsp. Nutmeg

Plain pie paste (crust)

1 c. Beef Stock or water

Directions:

Split kidney,remove core,tough skin and hard
matter, cut into 2 inch pieces.

Brine 1 hour

Wipe beef with cold,damp cloth and cut into
2 inch pieces.

Sprinkle beef and kidney with flour and spices.

Line the sides of a greased baking dish with
pie pastry and mix meats and place in pan
then add stock/water and cover with pie
pastry.

Bake @ 350 1 hour 15 minutes
Shrimp Cocktail

36 shrimp

4 tbsp. Lemon juice

3/4 c. Catsup

1 tsp A-1 steak sauce

1 tsp.Dill relish

2 tbsp. Finely chopped celery

1 tsp. Horseradish

pinch of salt

Directions:

Mix all ingredients and portion into
bowls and sprinkle with celery.

Salt to taste

Chill an hour in fridge

Serves Momma and 4 little ones

Big T's Chicken Pot Pie

Pastry;

2 c. Flour

4 tsp. Baking Powder

1 tsp. Salt

8 tbsp. Crisco Shortening

Sift dry ingredients and rub in Crisco adding
just enough water to make stiff dough.

Roll out thin and line Pyrex baking dish,
then use remaining dough to cover pie.

Ingredients;
2 large chicken breasts diced

1 bell pepper of choice

1 c. chopped celery

4 carrots sliced

Can of peas or frozen peas

One large potato of choice cut into small cubes

Add cream sauce and pour over and cover
Ingredients then place pie crust over top.

Bake in Hot oven 450 f. for 20 - 25 minutes




Chili Loaf

1 c. Canned Peas

1 c. Bread Crumbs

1 egg

1/2 lb. Ground beef

1 onion minced

1 tbsp. melted butter

1 tsp. Chili powder

1 tsp. Salt

1 Green bell pepper chopped

Topping: Tomato sauce,brown sugar
                     Worcestershire sauce
                      and bacon

Directions:

Combine all ingredients.Form in loaf pan

Bake in moderate oven at 375 f. 1 hour


Mexican Fried Chicken

10 chicken thighs
1 clove garlic
Salt n Pepper to taste
1 Green Pepper
2 large tomatoes
5 tbsp. Crisco
Corn Croquettes

For Croquettes;

2 tbsp. Crisco
1 can corn
2 tbsp. Flour
2 c. Milk
1/2 tsp. Sugar
Salt n Pepper
1 egg
Breadcrumbs

Directions;

Debone thighs then sprinkle with salt
and pepper.
heat 5 tbsp. Crisco in pan and add clove
of garlic and green pepper diced.
when garlic turns brown take out of pan.
Fry chicken til brown then add tomatoes
diced then cover and simmer til ready.

For Croquettes;

Drain can of corn Blend Crisco and flour
together in pan over high heat.
Add milk and stir til boiling cooking 5
minutes stiiring all the time.
Add seasonings and corn and cook 5
minutes then allow to cool.
When cold form with lightly floured
hands and form croquettes and brush
over with beaten egg.
Toss in breadcrumbs and fry in hot
Crisco til brown. Drain
Place chicken on hot platter,garnish
with croquettes and serve hot.
