Asparagus soup
40 heads asparagus
3 tbsp flour
3 tbsp Crisco
1/2 c cream
1 quart white stock
1 bunch herbs
1 bay leaf
4 sprigs parsley
2 egg yolks
1 blade mace
1 onion chopped
salt n pepper to taste

Take heads off asparagus and put aside.
Cut up stalks in slices,also onion.
put into saucepan with crisco,herbs ,parsley,
bay leaf,mace,and fry gently for 15 minutes.
Add flour then stock,and simmer slowly for 1 1/2 hours.
Rub thru sieve,add cream,yolks of eggs and seasonings,reheat,but take care not to boil soup.Just before serving,throw in asparagus tops which should be first cooked in a little boiling stock.
Blushing Bunny
1 lb. Cheese
1 tbsp Butter
3/4 c. Tomato Soup
1/3 tsp. Mustard
1/3 tsp. Pepper

Cut the cheese into small pieces and melt it with a double boiler,stirring occaisionally.
Add Tomato soup and seasonings,cook until smooth,and serve on buttered toast.
Serves 6
Chili Sauce.
12 large ripe tomatoes
3 Onions
2 Sweet Green Peppers
2 Sweet Red Peppers
2 tbsp mixed spice
2 tsp. Celery seed
2 c. Vinegar
1 1/2 c. Brown sugar
3 tsp. Salt

Peel the tomatoes and cut in small pieces. Chop the onions and peppers.
Mix all together and add remaining ingredients,having the spices tied in a cheesecloth bag.
Cook until thickened, About 1 1/2 hours.
Turn into sterilized jars and seal.
BigT's Homestyle Chili
1 1/2 pounds extra lean burger
1 1/4 pounds stew meat
Spices: 1 tsp each powders
paprika,garlic,onion,oregano
chili.
1 can black beans
1 c. Diced Onion
1 diced orange bell pepper
2 cans diced tomato with juice
1 can tomato sauce
First brown the meat with spices
in a skillet then add to the
stock pot
then brown stew meat and add in
Worcestershire sauce and simmer
til done
then add all into stock pot.
Next add in Onion and Bell Pepper.
Add can of Black Beans then the
diced tomato.
Add in can of tomato sauce.
STIR,then add 2 tsp. chili powder
Placing pot on medium heat
Cook for 20 minutes then you will
notice the juices rise to the top.
Add 1/2 c flour to some water
to form a thin paste then add into
pot and stir a couple minutes
and you will notice a slurry
forming,
nobody likes a soupy chili.
Cook additional 30 minutes
and enjoy.

Grape Juice Soup
3 tbsp. Pearl Tapioca
2.c Boiling Water
pinch salt
small piece stick cinnamon
2 c. Grape Juice
1 tbsp. Lemon Juice
2 tbsp. Sugar

Soak tapioca in water for several hours
Drain,add boiling water,salt and cinnamon and cook in a double boiler until clear.
Add grape juice,lemon juice and sugar and bringto a boiling point.
Serve hot or cold,makes 6 servings
Virginia Okra Stew
1/2 shin of beef
1 gallon of water
1 quart fresh tomatoes
4 small onions
2 green sweet peppers
1 pint okra
1/2 yellow turnip
seasoning

Simmer the beef in a gallon of water until liquid is reduced to half.
Add the tomatoes cut up,the onions thinly sliced,the pepper also sliced,a pint or more of thinly sliced tender okra,and yellow turnip diced.
Cover and cook slowly until thick-about 4 hours.
Remove bone and cut meat into pieces.
Season to taste and serve with boiled rice,adding a slice of lemon to each portion as served.
Time in cooking,7 hours.

Cheese Soup
4 tbsp. grated cheese
3 quarts clear soup stock
1 1/2 c. flour
4 tbsp. crisco
2 c. cream
2 eggs
salt,pepper and paprika to taste
Finely grated cheese

Put flour into double boiler,add cream gradually,crisco,4 tbsp. grated cheese and paprika to taste,stir over fire til a smooth paste.
Break in eggs,mix well,cook two minutes longer and allow to cool.
Roll into balls,when they are formed,drop into boiling water and cook gently for 5 minutes.
Drain and put into soup tureen.
Pour over boiling stock and serve with dish of grated cheese.
Mrs. Richters Beef Stew
2 pounds beef
6 medium sliced potatoes
1 onion
Pepper and salt
Flour
1 c. boiling water
1 tbsp. Butter

Cut beef into inch squares,slice potatoes and shred onion.
Into the upper container of a large double boiler,put a layer of beef and then one of the potatoes.
Sprinkle with chopped onion and pepper and salt,and dredge with a little flour.
Repeat until all materials are used.
Add boiling water,cover and steam 4 hours.
Add butter just before serving.
Serves 6
Pumpkin Peanut Spicy Soup
This is a Blender recipe
2 c. Broth
1 tsp. Ginger ground
1 tsp. Garlic Powder
1/2 tbsp. Olive oil
1/2 chopped onion
Blender it thoroughly
then: 1 can of pumpkin
Blender that a few seconds
1/4 c. Peanut butter
Blender it again then add jalepenos....Blender it a few seconds then add to saucepan and simmer on low til hot.
You can add a sprinkling of coconut milk on top for a creamy texture if desired.
This recipe can be made as hot (flavour) as you want.
Serves one Mom and two little ones.
Chicken Bacon Cream Soup
4 chicken breast diced
12 oz. package of bacon
8 oz. cream cheese
1 carton bone broth
8 oz. shredded carrot
1 whole onion diced
16 oz shredded cheddar
1 pint heavy cream
1 bunch green onions
6 oz. baby spinach
1 tbsp. minced garlic
1 package Ranch seasoning
red pepper flakes
1 tsp. Xantham gum/cornstarch
1 can of mushrooms

Directions:
Dice bacon and cook in stockpot.
keep grease in pot,remove bacon.
cook veggies in grease til done
put in diced chicken and bacon and cook til done.
Add 1/2 broth and cream cheese til melted.
Use other 1/2 of broth to whisk in ranch seasoning then pour into pot and stirring constantly add in heavy cream.
Next add spinach and put on low flame to simmer.
use a bit of sauce to mix Xantham gum/cornstarch
Once smooth add into pot and stir.
Salt n Pepper to taste
Stir in cheddar chese and mix thoroughly.

Chili Con Carne
1 pound hamburger steak
1 can tomatoes
1 can red kidney beans
2 bay leaves
2 onions chopped
2 green peppers chopped
4 c. boiling water
4 tsp. chili powder
2 tsp. salt

Combine ingredients.
Simmer til thick.
Serve at once.

Amazing Chicken Soup
1 c. Rice
5 strips thick bacon diced
1 package mac n cheese sauce mix
1 box Velveeta chicken casserole
Chicken diced
Noodles is you prefer

In 5 quart stock pot,fill 3/4 with water,add rice,bacon,cheese sauce mix.
Add velveeta cheese,vegies pack and seasoning.
Mix thoroughly.
Add diced chicken of choice and add egg noodles if you prefer.
set fire to medium cover and walk away for 2 1/2 hours.
water by then should have reduced a bit.
If yer real hungry it will last you all day.

Rice and Tomato Soup
Soup bone
2 carrots
2 onions
1 turnip
1/2 can tomatoes
1/2 cup rice
1 tbsp. flour
pinch of soda

Finely cut vegetables
and add to soup bone,cover with cold water and cook one hour.
add soda to tomatoes and mix well then add to pot and cook one hour.
Add rice,cook til done and thicken with flour.
Serves two big guys.
BigT's Beef Stew Over Rice
4 lbs Chuck Roast seared 1 minute each side
1 Stick of butter salted
1 Large white onion chopped
3 Large carrots chopped
In fry pan Sautee' butter,onion,carrots
Then put beef and sauteed items in
Crock pot,set to 8 hours.
Then add Jar of Pepperoncini w/juice.
15 oz can of Hunts Tomato sauce.
Add 1 cup of water
Add 1 packet each Beef Stew,Ranch,Au Ju.
Stir completely.
in 8 hours you will have the best beef stew
Serve over rice and enjoy.
BigT's Creamy Italian Sausage Soup
1 lb. Sweet Italian sausage
1 tbsp. olive oil
1 minced onion
2 cloves garlic crushed
4 c. chicken broth
1 can diced tomatoes
1 c. heavy cream
1 c. grated parmesan
1 box frozen spinach thawed

Place in stock pot on medium heat
olive oil,garlic and onion,sautee.
pour in chicken broth and diced tomato
let cook ten minutes while stirring
in heavy cream and parmesan.
Add thawed spinach...
Simmer 20 minutes
Saltine Crackers
Preheat Oven to 325f.
4 c. Flour
1/2 stick butter
1 tbs. Baking Powder
1/4 c. Milk
1 Egg white
1 tsp. Water

Sift together flour and baking soda,
Add butter and milk
Form into a dough.
Cut dough in half,
On well floured surface roll out thin and use pizza cutter to cut into squares.
Place on greased cookie sheet.
Next mix water with egg white and brush over crackers and sprinkle with salt.
Bake 17 minutes
BigT's Tomatoe Bisque
Puree' of 7 large tomatoes
1 c. chicken broth
8 oz. Cream cheese cubed
1/2 c. sugar
1 diced bell pepper of choice
2 cloves garlic minced
1/2 stick butter
1 tbsp. Basil
1 tsp. oregano
1 tsp. salt
1 tsp. paprika
Pepper to taste

Use blender to puree unpeeled tomatoes
Sautee' in stock pot butter,garlic,basil
oregano for a few minutes.
Then add tomatoe puree',bell pepper
chicken broth,sugar and cream cheese
cubes and salt on medium heat,stirring
occaisionally til smooth,about 30 minutes.
Serve at once. Enjoy
Creole Soup
2 tbsp. Butter
1/2 c. Bell pepper
1 Onion chopped
2 tbsp. Flour
1 1/2 c. Stewed tomatoes
1/4 tsp. Cayenne
2 c. Chicken broth
1/2 tsp. Salt
1/4 tsp. Pepper
3 c. boiled macaroni
1 tbsp. Grated horseradish

In saucepan, melt butter then add
bell pepper and onion and sautee.
Add flour to thicken
Add remaining ingredients,cover
and simmer 15 minutes
Boil macaroni,add to bowl
and top with soup then add
horseradish to serve at once.

Potato Soup
1 large onion
3 potatoes large
3 strips bacon diced
Whole Milk
Butter,salt,pepper

Direction:
Slice onions and potatoes and dice
the bacon and
fill pan with milk.
Cook on medium 40 minutes
Season to taste with butter,
salt n pepper
BigT's Pumkin Spicy Chicken Soup
2 c. Chicken Stock ( boil chicken in water )
2-3 Chicken Breasts or 4-5 thighs
1 tsp. Gound Ginger
1 tsp. Garlic Powder
Dab of butter about 1 tbsp.
1 can of Pumpkin
1/2. cup Creamy peanut butter
Hot sauce any kind to your liking

Directions:
Boil chicken in 2 1/2 c. water....extra will evaporate
In Blender add stock and seasonings,dab of butter
Blend on low
Add Pumpkin then Blend again
Add peanut butter to hear your blender dying
Add hot sauce while blending.
Pour into stock pot with chicken that you diced.
Simmer on low until hot

BigT's Cheesey Chicken Vegetable Soup
In Stock Pot;
1/4 c. butter
3 1/2 c. Water
4 chicken thighs diced
1 onion diced
1 can peas
2 diced carrots
2 potatoes diced
1 green bell pepper if desired
1 tsp. Paprika
1 tsp. Salt
1 tsp. pepper
Boil 30 minutes;
3 cups milk....1 can evaporated milk plus
1 1/2 c. Water Equal 3 c. milk
1/2 c. ( 6 tbsp.) Flour for thickener
Mix well then Add to stock;
2 c. American Cheese grated or pared
Add to soup mix stirring frequently
Cook another 20 minutes..
Serves 6
Avocado Soup
2 ripe avocados
1 pint cream
1/2 quart chicken stock
1/2 quart Clam broth

Directions;
Dice Avocado and put in blender with
clam broth and cream and blend til smooth.
Heat Stock and broth and add avocado mix
Be careful not to burn soup
Add 2 tbsp. Sherry before serving
Cream of Mushroom Soup
1/2 lb mushrooms
4 c. Water
1/2 medium onion
1 tsp salt
4 tbsp butter
4 tbsp. flour
1 c. Milk
1/2 c. Cream
1/2 tsp pepper if desired
Paprika sprinkle

In Saucepan over medium heat
Add Mushrooms.. chopped as desired
Add water and cook 30 minutes.
Then add onion..salt ..
Add butter and melt
add flour mixed with
cold milk to a slurry
Add to mixture and stir well.
Add cream and spices.
Cook 5 more minutes.
Serve with saltine crackers
