Big T's Apple Fritters

2.c Minced Apple
1 tbsp. Lemon Juice
1 1/4 c. Flour
1/2 tsp. Cinnamon
1/2 tsp. Nutmeg
1/4 tsp.Salt
2 tsp. Baking Powder
1 tbsp. Sugar
2 eggs
1/3 c. Milk
1 tbsp. Butter
1 tsp. Vanilla Extract

Preheat Oven to 375
Bake for 20 minutes

In Medium bowl combine dry ingredients and sift thoroughly with fork.
Now add wet ingredients and mix together,add apple and fold in.

Place on well greased tray

Makes 5 Frtters

Banana Walnut Cake

2/3 c mashed ripe banana
1/2 c butter
3 large eggs
3/4 c water
2 c flour sifted
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 c walnuts Or 1/2 c chopped walnuts and 1/2 c raisins

In mixing bowl beat together mashed banana and butter until creamy.Add water.Beat well.Stir in flour,baking powder and baking soda and cinnamon.
Beat until smooth.Add walnuts.
Spoon batter into an oiled and floured9x13 baking pan.
Spread batter evenly in pan.
Bake at 350 degrees for 20 minutes or until knife comes out clean.Cool and cut into squares...Serves 8 to 10.
Fruity Yogurt Pancakes

2 eggs
2 tbsp. veg oil
1 c. plain yogurt
2 c. flour
1/4 tsp. baking soda
1/4 c. unsweetened fruit juice
nutmeg

In mixing bowl beat together eggs and oil.
add yogurt flour baking soda and fruit juice and beat until smooth.
drop batter by 1/4 cupfulls onto hot oiled griddle.
Sprinle pancakes with nutmeg.
Turn and continue to cook,serve nutmeg side up.
Spoon Apricot syrup over pancakes.
Recommended fruit juice,
Apple,Pear,orange,grapefruit,pineapple,papya

Homemade Apricot Syrup

Combine one cup chopped apricots and one cup water in a small saucepan,
bring to a boil,and simmer 20 minutes,covered.
Cool; Whip contents in a blender,add 1 1/2 cups water or enough to reach syrup constistency,Store refrigerated.
Yields 3 cups

Fruit Sweetened Cheesecake

Pastry
1 egg yolk
1/4 c milk
1 c white flour
1/2 tsp baking powder
1 tsp nutmeg

Filling
4 eggs
2tsp lemon juice
2 c Blended Fruit
2 tsp vanilla extract
2 c cottage cheese
3 tbsp flour

Topping
Any cup of pudding

Directions
To prepare crust beat together
 egg yolk and milk then add floure
,baking poweder andnutmeg.
Blend well
Pat evenly in bottom of oiled 9 in Spring-Form Pan.

To prepare filling,whip all ingredients in a blender.
Pour into pastry-lined pan.
Bake at 350f. for one hour and 25 minutes.

Top with Pudding
BigTs Pineapple Sugar Free Upside Down Cake

2 c. Unsweetened Applesauce
1 c. Crisco
6 Large eggs
3/4 c.Water
Mix Thoroughly on low
-----------------------------
4 c.Flour
4 tsp. Baking Powder
2 tsp. Baking Soda
2 tsp. Cinnamon
Mix together until batter forms.
Add Pineapple Rings on bottom of Large greased cake pan
Bake at 375 for 32 minutes
Test center with knife
If it comes out clean then its done

Sugar Free Peanut Butter Cookie

1/4 c mashed banana
1/2 c peanut butter
2 large eggs
3/4 tsp vanilla extract
2 tblsp soft butter
1 c flour
1/2 tsp baking powder
1/2 tsp nutmeg
1 c chopped peanuts

mix together mashed banana,peanut butter,eggs,vanilla,and butter til creamy
add flour,baking powder and nutmeg.
beat well,stir in peanuts.

drop batter by tsp fulls onto greased cookie sheet
bake at 375f. for 5 to 8 minutes or until browned.
cool on wire racks

BigT's Apricot Cookies Sugar Free

2 c. Flour
2 tsp. Baking Powder
1 tsp. Cinnamon
Sift Dry Ingredients

In mixer bowl

4 eggs beaten
3 tbsp. Truvia (stevia)
1 1/2 tsp. Vanilla
4 tbsp. soft butter or Crisco
Can of Apricots without juice

Mix wet ingredient thoroughly

Add Dry ingredients fully

Add 1/4 c. juice til smooth

Drop batter onto greased sheet

Bake @ 375 for 12 - 14 minutes
