Asparagus and Olives Au Gratin
2 c. cooked asparagus
1/3 c. stoned chopped olives
1 hard cooked egg
1 c. milk
2 tbsp. flour
2 tbsp. butter
1/2 tsp. salt
1/8 tsp. pepper
1 c. buttered crumbs

Place a layer of asparagus in the bottom of a greased baking dish.
Sprinkle with chopped olives and egg
Make a white sauce of the milk,butter,flour and seasonings.
Pour the sauce over the ingredients in the dish and cover with the crumbs.
Bake in hot oven until the crumbs are brown.
Bake at 400f. for 25 minutes.

Squash Souffle
2 c.Mshed Squash
1 c. cream or thin white sauce
1 1/2 tsp. salt
1 tsp. grated onion
2 eggs

Add seasonings and cream to squash and blend thoroughly.
Add egg yolks slightly beaten and fold in thickly beaten whites.
Bake in moderate oven until firm.
Time in baking,30 minutes.
Temperature 350f.
Serves 6
Stuffed Onions
6 good sied onions
1 cup bread crumbs
1/4 cup nut meats
1/4 tsp celery salt
Salt,Pepper
1/3 c.milk
6 tsp. Butter

Peel onions and cok until partly done,about alf an hour
Drain and remve center portions
Chop the centers and with one half cup mix the bread crumbs,nuts,seasonings and milk.
Fill the onions with the stuffing and put a teaspoon of butter on top of each.
Place in a pan and bake in a moderate oven until the onion is tender and the stuffing brown.
Time 45 min @ 350f.
Serves 6
Succotash
6 large ears corn
1 c. lima beans
1/4 c. cream
2 tbsp. butter
Salt n Pepper to taste

Cook corn and cut from the cob.
Add beans,butter and cream.
Season to taste with salt and pepper.
Bring to a boil before serving.
Serves Momma and 3 little ones.
Depth Charge Delights
1, 10oz package broccoli
1 1/4 c. milk
3 eggs beaten lightly
1 tsp. wheat germ
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 c. grated cheese

Preheat oven to 350f.
Cook broccoli in boiling water for 3 minutes;drain.
In another saucepan add milk,boil then cool to lukewarm.
mix eggs with salt,wheat germ and nutmeg in bowl.
Add to milk and add cheese then beat vigorously.
pour into greased baking dish then add broccoli.
Bake 40 minutes then test with knife in center,knife should come out clean.
Serve hot.
Curried Cauliflower
4 tbsp. crisco
1 cauliflower
1 sliced onion
1 tbsp. curry powder
1 tbsp. lemon juice
1/4 tsp. salt
1 c. stock of choice

In boiling water place cauliflower and salt until tender,
Drain then cut into bite size pieces
fry onion in crisco then add curry powder,lemon juice and stock.
Simmer 15 minutes then strain into clean saucepan.
Add cauliflower and salt then simmer another 15 minutes.
Serves two big guys,one mountain man or momma and two little ones.
Scalloped Potatoes
8 medium potatoes sliced
1 gren pepper chopped
1 onion minced
2 tsp. Salt
1 tsp. Pepper
1 can Cream of Mushroom Soup
1 c. Milk

In Baking Dish
Layer potatoes,bell pepper and onion
Add seasonings,soup and milk and pour
over potatoes.Cover with foil.
Bake at 350f for 1 1/2 hours
Corn O'Brien
1 can of corn drained
1/4 c. Butter
2 thick slices of onion
1/2 c. Grated cheese of choice
1/2 Green pepper
1 1/2 pimento
1/2 c. thick white sauce

Directions;
Put butter in frying pan and add onion
and green pepper which have been
diced.
Add pimento corn and cream sauce
Salt n pepper to taste.
Pour into greased baking dish
and add cheese then bake at 350 f.
for 20 mnutes
Cauliflower With Cheese Sauce
In double Boiler
3 c. Milk or 1 can evap w/1 1/2 c. water
3 tbsp. Butter
1 tsp. Paprika
1 tsp. Salt
Pepper to taste
Steam head of cauliflower
serve with cheese sauce.

Directions;
When boiling add 4 tbsp. flour with a bit
of water to make thin paste for thickening.
When done add 2 c. chunks American
cheese or a couple handfuls of cheddar.
Let cheese melt stirring constantly.
Arrange prepared cauliflower and serve
with cheese sauce.
If you dont have a double boiler then put
in a sauce pan on medium flame
