Chocolate Cream Fudge

3 c. White Sugar
1/4 c. Corn Syrup
3 Squares Chocolate
(3 tbsp.Cocoa,1 tbsp.Oil)
1/4 tsp. Salt
1 c. Evaporated Milk Or Thin Cream.
3/4 c. Nut Meats

Mix all the ingredients except nuts, and boil til soft ball is formed when a little of syrup is tried in cold water (240f)
Cool until lukewarm,add nuts and beat until creamy.
Spread in a buttered pan and when cool cut into squares.

Homestyle Mayonnaise

1/2 tsp. Dry Mustard
1 tsp. Salt
1/4 tsp. Paprika
Dash of cayenne pepper
2 egg yolks
2 tbsp. Red wine vinegar
2 c. Canola Oil
2 tbsp. Lemon juice
1 tbsp. Hot water

Mix dry ingredients; add egg yolks and blend well.
Add vinegar and blend well.
while blending with a mixer add oil in drops about 1/4 c.
Continue blending to emulsify then add remaining oil with lemon juice.
If its thin just add oil till thick.
Then add the hot water,keep it from oily appearence.

Makes 2 cups

Oyster Sauce

1 pint oysters

1 c. Cream

2 tbsp. Butter

pinch of Cayenne

pinch of salt

1 tbsp. flour

Place oysters in fry pan and heat
in their own juice til a boil.

Seperate oysters from juice and
place oysters in bowl.

Add to juice the cream,butter,
cayenne and salt.

Then add flour to thicken and
add oysters into pan.

Serve over Turkey,Fish or chicken.

Piquante Mayonnaise

1 egg yolk

2 tbsp. Vinegar

1/4 tsp. Ground mustard

3/4 tsp. Salt

1/8 tsp. Pepper

1 c. Vegetable oil

1/4 c. Chopped Dill pickle

2 tbsp. Chopped onion

Directions:

Beat egg yolk and half the vinegar

Add mustard,salt n pepper and mix well.

Drop oil a teaspoon at a time into the egg
mixture beating constantly until 1/4 c oil
is added.

Continue to add more oil,beating thoroughly
after each addition.

As it thickens,add the remaining vinegar
a little at a time ....1 tsp lemon juice may be
used as well.

Store in Ice Box covered...

Tomato Relish

1 quart ripe tomatoes

6 small onions

2 green bell peppers

1 quart green tomatoes

3 red bell peppers

1/2 c. Salt

2 c. Vinegar

2 c. Sugar

Directions:
Chop green tomatoes then add salt.

Allow to stand overnight then drain.

Chop ripe tomatoes,onions and
peppers then add to green tomatoes.

Add vinegar and sugar.

Heat to boiling then simmer 30
minutes stirring frequently.

Fried Bananas

3 ripe bananas

Peel bananas and slice thickly

Sprinkle with salt and lemon juice

Dip in flour then egg then fine crumbs

Fry in deep hot fat for 3 - 4 minutes
