Wood Cookstove Conversion For Modern Ovens

Slow Oven-----250 to 350 Fahrenheit

Moderate Oven-----350 to 400 Fahrenheit

Hot or Quick Oven-----400 to 450 Fahrenheit

Very Hot Oven-----450 to 550 Fahrenheit

Morning Coffee

Rinse coffee pot with boiling water

1 tbsp. Coffee grounds per cup of coffee

1 egg slightly beaten in grounds

up to 8 tbsp. of coffee per egg

Boil for 8 minutes for strong coffee.

Cafe' Au Lait

Combine with an equal quantity of
scalded milk.

Iced Coffee

Prepare grounds for pot using 1 1/2 tbsp.
ground coffee per cup.

Pour into tall glasses filled with ice

Add 1 tbsp. ice cream/whip cream



Tomato Relish

1 quart ripe tomatoes

6 small onions

2 green bell peppers

1 quart green tomatoes

3 red bell peppers

1/2 c. Salt

2 c. Vinegar

2 c. Sugar

Directions:
Chop green tomatoes then add salt.

Allow to stand overnight then drain.

Chop ripe tomatoes,onions and
peppers then add to green tomatoes.

Add vinegar and sugar.

Heat to boiling then simmer 30
minutes stirring frequently.

BigT's Fries

I use a Ninja

3 big potatoes of choice

Preheat air fryer to 400
Timer 20 minutes.

Cut into leangths but not tiny
or too thin.

Place tater strips in fryer then
spray with canola oil then
adding garlic powder salt&pepper

At 10 min. open fryer and toss
taters about.

Fry the remaining 10 minutes
then cool.

Secret sauce: Mayo and Ketchup
add pickles if desired

Secret sauce #2: Mayo,vinegar
and dill pickles



BigT's 420 butter basics

1 pound (4 sticks) butter

1 oz. Shake or 1/4 oz. Bud

First ya gotta process the medium
in case of bud put in food processor
and bring to crumble

Melt the butter first on low heat
then add your medium of choice.

Sautee for 20 minuts all the while
paying attention to what you are
doing stirring occaisionally

After 20 minutes pour into bowl
using metal strainer then let cool
til solid.

Butter will be dark green.

Use as you would for cooking &
baking you'll be surprised at the
results after your meal.
BigT's 420 French Toast

Best Prep:
Repurpose four slices of almost dry
bread or use home baked bread thick
sliced.

in deep dish add in Half & Half
whisk in 6 egg yolks and cinnamon &
whisk with fork

Fry on medium heat til done each
side then use the butter youve created
and give it a generous wash over

Stack buttered slices then add syrup of
choice.

A good addition is raspberry jam as it
cuts the taste of your creation.

BigT's ...Pork Tenderloin Enchiladas

1 tenderloin

12 Corn tortillas

1 c. chopped onion

1 c. chopped celery

1 c. chopped carrot

1 c. Green chilis

3 c. grated cheese

28 oz can of red sauce

1 can green chili sauce

1 bottle of Thailand Mango Habenaro

In fry pan heat oil and lightly fry corn
tortillas.

Next cook tenderloin in Worcestershire
 
Sautee onions, celery and carrots in butter.

Place meat,veggies chilis and green sauce
and cheese on tortillas and roll then place
tortilla in baking dish seam side down.

Its sounds easier than it really is.

Once all tortillas are in pan,top with
Red sauce and remaining cheese

Top with entire bottle of Thailand
Mango Habenaro Sauce

Bake in oven at 350 for 20 minutes




Coconut Cake

3/4 c. Crisco
1 1/2 c. White Sugar
4 large eggs beaten
1 1/2 c. milk
1/4 c. vegetable oil
mix well
3 c. Cake Flour (add 1 tbsp corn starch per cup of flour)
1/2 tsp. Salt
1 1/2 tsp. Baking Powder
1/2 c. unsweetened coconut
mix well
Preheat Oven To 350
Prepare Pan with cooking spray
Flour Pan for cake removal

Bake @ 350 for 25 minutes

Frosting

3 c. Powdered Sugar
1/2 c. Milk
1/2 c. Crisco
1 c. Sweetened coconut
8 oz. Cream Cheese

Stuffed Cabbage

1 medium cabbage

1 pound ground beef 93% lean

2 slices bacon

1 onion

1/2 c. bread crumbs

1/2 c. milk

1 large egg

Seasoning

1 large bell pepper

Select cabbage and remove outside
leaves then cut out stalk end leaving
a hollow shell.
Chop burger,bread and onion and add
crumbs soaked in milk,beaten egg,
salt and pepper.
Shape into balls and arrange in cabbage.
add strips of bell pepper on top of mixture
Tie in cheesecloth and put in large pot
and boil until tender.
